There's a new Mexican-fusion restaurant opening in Lower Saucon Township on August 26th!
Located at 1882 Leithsville Road, in the Creekside Marketplace, the new facility that once housed Unrivaled Fitness + Wellness will now be home to Bubbakoo's Burritos! Which will be the first Lehigh Valley outpost for the chain.
Paul Altero and Bill Hart established Bubbakoo's in 2008 in Point Pleasant, New Jersey, and ever since more than 130 Bubbakoo's restaurants are now part of the company, with a few more having opened in the Lehigh Valley and the surrounding regions in recent years. In 2021, Bubbakoo came to Richland Township, Bucks County on North West End Boulevard (Route 309); in 2022, it came to Bartonsville, Monroe County on Route 611; in 2024, it came to Hatfield Township, Montgomery County on Forty Foot Road; and now in 2025, it comes to the Lehigh Valley in Hellertown!
They just aren't burrito based, they also serve taco salads, hard and soft shell tacos, quesadillas, burritos, burrito bowls, nachos, and more ! Bubbakoo's Burritos aren't just a one-trick pony. Similar to other burrito places, you can pick and choose what you desire to build your burrito. Starting with the protein: crispy, grilled, or shredded chicken, hibachi steak, shrimp, ground beef, carnitas, barbacoa, or fried cauliflower. The next step is to choose the base ingredients, which may be either brown or white rice, black or pinto beans, a distinctive flavor (e.g., sriracha ranch, pineapple salsa, cheese, pickled jalapenos, or crema Mexicana), and toppings. Extras like bacon, guacamole, and queso are available as add-ons.
Other tasty foods on the menu that will be availble is Nashville hot chicken, red pepper aioli, Philly steak, Buffalo ranch crispy chicken quesadilla, and MORE! One of the chain's best-selling items is the Chiwawa, which resembles a huge rice ball.
And cool side dishes like chicken wings, loaded fries, curly fries, cauliflower nibbles, jalapeo poppers, and Southwest potstickers are among the other menu standouts. Room for dessert?? Bubbakoo's Burritos will also have Fried Oreos and Love Chips, a tasty fried sugar coated tortillas chips drizzeled with either raspbery or caramel sauce.
